Water quality matters. If possible, use filtered water (~75–150 ppm). Taste and tweak: finer grind = slower/stronger, coarser = faster/lighter.
COFFEE INFORMATION
Carlos is back—and this time, we will be showcasing 2 varietals, starting with Pink Bourbon. It was in 2023 when we first experienced his coffee and in 2024 both Paul and Dan met Carlos on an origin trip to Colombia. Grown at Finca El Recuerdo in Huila, Colombia, this Pink Bourbon reflects Carlos’ philosophy: let the variety and terroir speak for themselves.
Together with his wife, Patricia, Carlos cultivates four varieties across their 4-hectare farm using environmentally friendly practices. Their meticulous process—selective handpicking, careful fermentation, and slow sundrying—translates into a cup that radiates their dedication and skill.
Expect a bright and expressive cup bursting with guava and lime a reflection of both the unique Pink Bourbon variety and the passion that Carlos and Patricia pour into every harvest.
