Water quality matters. If possible, use filtered water (~75–150 ppm). Taste and tweak: finer grind = slower/stronger, coarser = faster/lighter.

Bright & Juicy, this is a coffee that is immediately expressive. This Bourbon from Merci Fernández's farm—La Pomarossa—in Jaén, Peru is the first of the two lots we're bringin back this season. Starfruit and caramel notes, with a warmth that lingers. A heritage varietal grown with rare precision and intention,
