Victor Felix Ramirez comes from a lineage of legendary coffee producers. After Victor and Blanca married, the high school sweethearts decided to take the plunge and buy their own plot of land, planting it with the best Arabica varieties for their unique soil and climate. Since buying the farm, almost four decades have passed. Throughout their journey, the pair have had a piecemeal approach to speciality coffee. Each season their crop is assessed and the results are used as guidance for the following harvest. This particular lot from Victor Felix Ramirez is called Bourbon ‘Aji’ by the local farmers after it was discovered growing in isolation. Aji is Spanish for chilli, and when the ripe cherries are crushed, the smell resembles red peppers. However, after research into the plant, it was discovered to be an Ethiopian Landrace variety - quite rare in this region.
